Skordalia (Greek Garlic & Potato/Bread Dip)
Skordalia is a traditional Greek dip made with garlic and either potatoes or bread. It's creamy, garlicky, and perfect as a dip or spread.

Main Ingredients
- 4 medium Potatoes peeled and cubed
- 6 cloves Garlic minced
- ½ cup Olive Oil
- ¼ cup Lemon Juice freshly squeezed
- ½ cup Water
- to taste Salt
- to taste Pepper
1. Boil the potatoes in salted water until tender, about 15-20 minutes.
2. Drain the potatoes and let them cool slightly.
3. In a blender, combine the potatoes, garlic, olive oil, lemon juice, and water. Blend until smooth.
4. Season with salt and pepper to taste.
5. Transfer to a mixing bowl and serve.
