Ingredients

  • 4 medium Potatoes peeled and cubed
  • 6 cloves Garlic minced
  • ½ cup Olive Oil
  • ¼ cup Lemon Juice freshly squeezed
  • ½ cup Water
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. 2. Drain the potatoes and let them cool slightly.
  3. 3. In a blender, combine the potatoes, garlic, olive oil, lemon juice, and water. Blend until smooth.
  4. 4. Season with salt and pepper to taste.
  5. 5. Transfer to a mixing bowl and serve.
