Ingredients

  • 2 large eggplants
  • 3 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Prick the eggplants with a fork and place them on a baking sheet. Roast for about 30 minutes, until the skin is charred and the flesh is soft.
  3. Let the eggplants cool, then scoop out the flesh and discard the skin.
  4. In a blender, combine the eggplant flesh, garlic, olive oil, lemon juice, smoked paprika, salt, and black pepper. Blend until smooth.
  5. Adjust seasoning to taste and serve with bread or crackers.
