Ingredients 

Main Ingredients

  • 2 large Eggplants halved
  • 3 cloves Garlic minced
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 tablespoon Lemon juice
  • 1 pinch Red pepper flakes optional

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved eggplants on a baking sheet, drizzle with olive oil, and roast for 30 minutes until soft.
  3. Once roasted, scoop out the eggplant flesh and place it in a blender.
  4. Add minced garlic, cumin, paprika, salt, lemon juice, and red pepper flakes to the blender.
  5. Blend until smooth and creamy. Adjust seasoning if needed.
  6. Serve with pita bread or fresh veggies.
