Stewed Spinach with Chickpeas

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can diced tomatoes (14 oz)
- 1 can chickpeas, drained and rinsed (15 oz)
- 1 lb fresh spinach, washed and chopped
- 1 cup vegetable broth
- to taste salt and pepper
- Heat olive oil in a large pot over medium heat. 
- Add chopped onion and cook until translucent, about 5 minutes. 
- Add minced garlic, ground cumin, and ground coriander. Cook for another minute. 
- Stir in diced tomatoes and cook for 5 minutes. 
- Add chickpeas and vegetable broth. Bring to a simmer. 
- Add chopped spinach and cook until wilted, about 5 minutes. 
- Season with salt and pepper to taste. Serve hot.
