Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can diced tomatoes (14 oz)
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 1 lb fresh spinach, washed and chopped
  • 1 cup vegetable broth
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, and ground coriander. Cook for another minute.
  4. Stir in diced tomatoes and cook for 5 minutes.
  5. Add chickpeas and vegetable broth. Bring to a simmer.
  6. Add chopped spinach and cook until wilted, about 5 minutes.
  7. Season with salt and pepper to taste. Serve hot.
