Ingredients

  • 8 pieces Artichoke bottoms
  • 1 cup Peas fresh or frozen
  • 1 cup Carrots diced
  • 1 cup Zucchini diced
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Garlic powder

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine peas, carrots, zucchini, olive oil, salt, black pepper, and garlic powder.
  3. Place the artichoke bottoms in a baking dish.
  4. Spoon the vegetable mixture into each artichoke bottom.
  5. Bake for 30 minutes or until the vegetables are tender.
