Main Ingredients
- 8 pieces Artichoke bottoms
- 1 cup Peas fresh or frozen
- 1 cup Carrots diced
- 1 cup Zucchini diced
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Garlic powder
- Preheat your oven to 375°F (190°C). 
- In a mixing bowl, combine peas, carrots, zucchini, olive oil, salt, black pepper, and garlic powder. 
- Place the artichoke bottoms in a baking dish. 
- Spoon the vegetable mixture into each artichoke bottom. 
- Bake for 30 minutes or until the vegetables are tender. 
- Serve warm and enjoy!
