Ingredients 

Main Ingredients

  • 8 medium Tomatoes
  • 1 cup Rice uncooked
  • 1 medium Onion finely chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Tomato paste
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ cup Parsley chopped
  • ¼ cup Mint chopped

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the insides. Set aside the tomato pulp.
  3. In a mixing bowl, combine rice, onion, olive oil, tomato paste, salt, black pepper, parsley, and mint.
  4. Fill the hollowed tomatoes with the rice mixture.
  5. Place the stuffed tomatoes in a baking dish. Pour the reserved tomato pulp around the tomatoes.
  6. Cover with foil and bake for 40 minutes, or until the rice is cooked.
