Stuffed Tomatoes (Domates Dolmasi)

- 8 medium Tomatoes
- 1 cup Rice uncooked
- 1 medium Onion finely chopped
- 2 tablespoon Olive oil
- 1 tablespoon Tomato paste
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ¼ cup Parsley chopped
- ¼ cup Mint chopped
Preheat the oven to 375°F (190°C).
Cut the tops off the tomatoes and scoop out the insides. Set aside the tomato pulp.
In a mixing bowl, combine rice, onion, olive oil, tomato paste, salt, black pepper, parsley, and mint.
Fill the hollowed tomatoes with the rice mixture.
Place the stuffed tomatoes in a baking dish. Pour the reserved tomato pulp around the tomatoes.
Cover with foil and bake for 40 minutes, or until the rice is cooked.
