Sun-Dried Tomato Pesto

- 1 cup sun-dried tomatoes packed in oil, drained
- ½ cup grated Parmesan cheese
- ½ cup olive oil
- ¼ cup pine nuts toasted
- 2 cloves garlic minced
- ¼ cup fresh basil leaves
- 1 tablespoon lemon juice freshly squeezed
- ¼ teaspoon salt or to taste
- ¼ teaspoon black pepper freshly ground
1. In a food processor, combine sun-dried tomatoes, Parmesan cheese, pine nuts, garlic, basil leaves, and lemon juice.
2. Pulse until the mixture is finely chopped.
3. With the processor running, slowly add olive oil until the pesto is smooth and well combined.
4. Season with salt and black pepper to taste.
5. Transfer the pesto to a jar and refrigerate until ready to use.
