Sun-Dried Tomato Pesto

Main Ingredients
- 1 cup sun-dried tomatoes packed in oil, drained
- ½ cup grated Parmesan cheese
- ½ cup olive oil
- ¼ cup pine nuts toasted
- 2 cloves garlic minced
- ¼ cup fresh basil leaves
- 1 tablespoon lemon juice freshly squeezed
- ¼ teaspoon salt or to taste
- ¼ teaspoon black pepper freshly ground
- 1. In a food processor, combine sun-dried tomatoes, Parmesan cheese, pine nuts, garlic, basil leaves, and lemon juice. 
- 2. Pulse until the mixture is finely chopped. 
- 3. With the processor running, slowly add olive oil until the pesto is smooth and well combined. 
- 4. Season with salt and black pepper to taste. 
- 5. Transfer the pesto to a jar and refrigerate until ready to use.
