Tomato Fritters (Domatokeftedes - Santorini)

Main Ingredients
- 4 pcs Tomatoes chopped
- 1 pcs Onion finely chopped
- 1 cup Flour
- 1 teaspoon Baking powder
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 cup Feta cheese crumbled
- ¼ cup Fresh mint chopped
- ¼ cup Fresh parsley chopped
- ½ cup Olive oil for frying
1. In a large bowl, mix the chopped tomatoes, onion, flour, baking powder, salt, pepper, feta cheese, mint, and parsley until well combined.
2. Heat the olive oil in a frying pan over medium heat.
3. Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
4. Fry until golden brown on both sides, about 3-4 minutes per side.
5. Remove from the pan and drain on paper towels. Serve warm.
