Vegetable Tian (Layered Roasted Veggies)

Main Ingredients
- 2 tablespoon Olive Oil
- 1 medium Zucchini sliced thinly
- 1 medium Yellow Squash sliced thinly
- 1 medium Tomato sliced thinly
- 1 medium Red Onion sliced thinly
- 2 cloves Garlic minced
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Thyme fresh or dried
Preheat your oven to 375°F (190°C).
Drizzle 1 tablespoon of olive oil in the bottom of a baking dish.
Layer the sliced zucchini, yellow squash, tomato, and red onion in the dish, alternating them.
Sprinkle minced garlic, salt, pepper, and thyme over the vegetables.
Drizzle the remaining olive oil over the top.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender and slightly browned.
Serve hot and enjoy!
