Zucchini Ribbons with Lemon

Main Ingredients
- 2 large zucchinis sliced into ribbons
- 1 lemon zested and juiced
- 2 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper freshly ground
- 1. Use a vegetable peeler to slice the zucchinis into thin ribbons. 
- 2. In a mixing bowl, combine the lemon zest, lemon juice, olive oil, salt, and pepper. 
- 3. Toss the zucchini ribbons in the lemon dressing until well coated. 
- 4. Serve immediately or chill for 10 minutes before serving.
