- 2 large zucchinis sliced into ribbons
- 1 lemon zested and juiced
- 2 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper freshly ground
1. Use a vegetable peeler to slice the zucchinis into thin ribbons.
2. In a mixing bowl, combine the lemon zest, lemon juice, olive oil, salt, and pepper.
3. Toss the zucchini ribbons in the lemon dressing until well coated.
4. Serve immediately or chill for 10 minutes before serving.
